2 Egg Whites
1 Tbsp Lemon Zest
1/8 to 1/4 tsp Lemon Extract
4 Drops Yellow Food Color
1/2 Cup Oatmeal ground into flour Flour (1/4 cup flour)
1/4 cup Splenda
Beat Egg Whites until throthy and a little stiff.
Add Splenda, Zest and Extract. Blend.
Add Flour and beat well.
Seperate into 6 mini muffins and bake 350 degrees for 10 minutes.
